The Preparations for Shampite of Kosovo
A good foundation is always a guarantee for success, so let’s start with the base part, the pastry.
In a bowl add 6 egg yolks and 6tbsp of sugar and give it a good, old manual mix or pass it on an electric mixer. After the mixing, in the same bowl add all the milk, 6 tbsp of flour, and 200 grams of butter.
Mix it well.
Pick a good backing tray and place a baking paper on the bottom. Transfer all the mass and carefully spread to the entire surface. Bake it at 180 Celsius degree until it’s golden.
Next, bring a pan to the high temperature and transfer all the water and 350 grams of sugar. Steer it from time to time. After it starts boiling, low the heat down and let it become thicker in a medium for 5-7 more minutes.
Get another bowl; add the egg whites and the syrup. For this, you will need an electric mixer to achieve nice white foam.
In the meantime, the pastry is already baked. Let it cool down for 10 minutes and carefully apply all the white cream. Put it back in the oven for 5 more minutes.
Serve it cold with a sprinkle of cinnamon on top. And this is Shampite of Kosovo for you.
For the White, Sweet Cream
6 Egg Whites
350 Grams of White Sugar
100 ml of water
The Ingredients for Pastry in the base
6 Egg Yolks
6 tbsp of sugar
6 tbsp of wheat flour
6 tbsp of milk
200 grams of butter
½ tsp of baking powder
