The Preparations of qeshqek (chicken with wheat)
It will take you some time and it is a good test of your patience. We will start with the wheat. Pass it through cold water, wash it up, and soak it in a bowl of cold water for 2 Hours.
Then clean the chicken well and cut it into portions.
Use a deep Pot and let the chicken boil until it’s softened. Season the water with salt.
Use a Mortar or a kitchen hammer to press the wheat and transfer it to boil with around 1 Litre of water to boil. At a medium-high temperature boil the wheat for around 30 minutes.
After it is properly boiled you can serve that way or for making It crispier and boost the flavors we recommend laying it on the same tray you baked the chicken, add a few tablespoons of chicken broth and the chicken portions on top. Put it back in the oven for less than 10 minutes.
Once it is done ad some raisins and it will be ready to enjoy Qeshqek (Chicken with Wheat)!
2 Tea cups of wheat
3 Tablespoons of Butter
50 grams of raison
Salt and Pepper
