Roasted lamb with milk

A special taste that comes from the northern tradition of Albania. Roasted lamb with milk is part of the culture of cities like Kukës, Tropojë, and even Prizren. Roasted lamb with milk is a very simple dish to prepare but it tastes great.

The Preparations.

Start with cleaning the meat cutting into portions and season it well with salt and pepper.
Traditionally, for baking Clay Tray is used. It is fine to also use good metallic no sticking tray or Pyrex.
Use a knob of butter and nicely apply it to the tray. Transfer all the meat on the tray and pure all the milk on top with small knobs of butter.
Transfer it to a pre-heated oven and bake it for 3 hours at 150 Celsius degrees.
The milk will mostly evaporate and will give a nice crunch, golden layer to the lamb.
Remove it from the oven and let it shortly rest.

And that is the preparation of roasted lamb with milk and the rest is history!
